Directions
Ingredients needed:
- Eagle Island Sherried Mushroom Soup Mix (with seasoning packet)
- 4 cups (32 oz.) chicken broth
- 1/3 cup diced celery
- 1 1/3 cups half & half (or milk)
- 1/4 to 1/2 cup sherry (optional - not cooking sherry)
- 1/2 teaspoon salt (optional)
Add soup mix, celery and salt Step One: to chicken broth. Bring to a boil, then simmer, covered for 30 minutes. Stir in half & half and sherry. Simmer on low for 5 minutes and serve. (Do not boil.)
Recipe Variations
Use fat free half and half. Use reduced fat milk (2%), soy or rice milk. Use vegetable broth, rather than chicken broth. Vegetarian Variations Use vegetable broth rather than chicken broth. Add cubed chicken. Prepare soup and use as a base for a baked beef stroganoff dish.
